About this wine

Character

A Cinsault that shows dark and spicy: cardamom, clove, cinnamon and pepper over blackcurrant, blackberry and plum, joined by balsamic to animal notes of warm leather and liquorice. The grated chocolate brings no sweetness, but rather depth between freshness and bitterness. Lively and approachable.

Terroir and origin

Matassa farms around 20 hectares of scattered plots in the hills around Calce and Espira-de-l'Agly, surrounded by Mediterranean scrubland, cedars, fig trees and wild rosemary. The high-altitude garrigue sites reach up to around 450 metres. The soils consist of schist and marl, some of it black schist and black marl. Cover cropping, compost and manual work are standard practice, confirmed by Ecocert.

Grape variety and vinification

Single-varietal Cinsault. Tom Lubbe harvests early, and his wines rarely exceed 12% alcohol; this one sits at 10.0% vol. For his red wines he works with whole-cluster infusion. Fermentation is spontaneous, and bottling takes place without filtration or fining; since 2015 no sulphur has left the cellar.

On the palate

Cool entry, with plenty of grip and texture. The bitter notes stay delicate in the background and carry the wine, with salted almond defining the mid-palate. The fruit holds back, letting the garrigue lead instead; further along, the animal notes return. The finish feels almost raisiny.

Special features

In 2003, Tom Lubbe vinified his first vintage in his living room, in the old cellar that Gérard Gauby had left him. Today, Domaine Matassa is one of the icons of the natural wine scene, from Parisian bistros all the way to Noma in Copenhagen.
