About this wine
Character
A sparkling wine that openly displays its long ageing while still remaining cool. The yellow fruit comes across as soft and warm, the lees ageing lends pressure and richness, underpinned by a mineral tension that holds it all together. It is not opulent; its strength lies in complexity and length.
Terroir and origin
Gumpoldskirchen in the Thermenregion, calcareous soils. Here, Fred Loimer took over the Schellmann estate in 2004 and has since worked on Blanc de Noirs from Sankt Laurent and Pinot Noir. The main estate is in Langenlois in the Kamptal, farmed biodynamically since 2006; a year later Loimer co-founded respekt-BIODYN, a certification that also sets quality standards in the cellar.
Grape variety and vinification
Pinot Noir, Zweigelt and Sankt Laurent, pressed white. Made sparkling using the méthode traditionnelle, which Loimer has practised since 2013, then aged 78 months on the lees. As a Brut Nature it remains without dosage, meaning no sugar addition whatsoever after disgorgement. 12.0% vol., dry.
On the palate
The entry is defined by its versatility: warm, comforting fruit, joined by a powerful yeasty richness that lingers for minutes. In the background, the mineral side builds up, giving the wine a crisp, mineral mouthfeel. On the nose beforehand, mirabelle plum, peach and tarte Tatin, brioche with salted butter, oyster shell and wet chalk. The finish carries almond and hazelnut.
Special features
The cuvée is unusual: Zweigelt and Sankt Laurent alongside Pinot Noir, all pressed white. Add to that 78 months on the lees and the absence of dosage, which give this sparkling wine its nutty, mineral edge.
