About this wine
Character
A Pinot Noir that looks lighter than it actually is: slightly transparent crimson, with power and substance behind it. On the nose, first undergrowth with dry twigs and leaves, then dark fruit with black cherry, a touch of sour cherry and cherry stone, plus a hint of cherry cream on dark sponge cake.
Terroir and origin
The grapes come from Village-level vineyards in Beaune, from 30-year-old vines at 220 to 250 metres. Henri & Gilles Buisson farm 13 hectares biodynamically across the Saint-Romain, Santenay and Beaune appellations, a practice introduced by Henri Buisson in 1990. The plots sit on limestone soils with varying exposures.
Grape variety and vinification
Pinot Noir, hand-harvested, partially destemmed and spontaneously fermented in stainless steel tanks; the cap of skins was punched down and pumped over. Malolactic fermentation took place spontaneously in barrel, with ten to twelve months' ageing in 228-, 350- and 500-litre barriques as well as tonneaux.
On the palate
Silky, almost gliding, yet behind that silkiness stand tannin and structure. Meaty, juicy and pleasantly tangy, dry, at 13.0% vol.
Food pairing
Charcuterie with lomito de bellota, chorizo, lonzu and salami, filet mignon with ratatouille and pimentón-spiced purée, or spelt risotto with mascarpone and chanterelles.
Details
No more than 10% of the barrels are replaced each year, so the oak stays in the background. Frédéric Buisson tasted the wine daily and racked the barrels whenever he judged it useful. Fined with bentonite, only very lightly filtered, and sulphured only at bottling with no more than 40 to 50 mg/l total sulphite.
