About this wine
Character
Pale platinum in the glass, with lemon and lemon zest, greengage and apple on the nose, alongside tahini and nut. An Aligoté built on salinity and tension rather than fruit richness: fresh and firm, with a light tannin that gives the lean body structure.
Terroir and origin
The vineyards of the Pierre Percée site sit fairly high on the slope, on a limestone base complemented by marl and clay. The family estate is based in Saint-Romain and farms 13 hectares in Saint-Romain, Santenay and Beaune biodynamically; Henri Buisson introduced this approach in 1990, when it was still considered eccentric.
Grape variety and vinification
100% Aligoté from vines planted in 1978. Aged on full lees in used barrels with a small proportion of new oak; Frédéric Buisson tasted daily and racked the barrels whenever he felt it made sense. Fined with bentonite, only very lightly filtered, sulphured only at bottling with a maximum of 40 to 50 mg/l total sulphite. 12.0% ABV.
On the palate
Mineral and mouth-wateringly saline, the fruit restrained but precisely drawn: again lemon, greengage, apple. Alongside this a nutty note, but above all iodine and flint. It fizzes and crunches, a very faint yeasty sweetness flickers, then the wine runs bone dry down the throat.
Food pairing recommendations
Oysters and mussels in white-wine broth, ceviche, pan-fried pikeperch or grilled fish; also poultry in lemon sauce and warm gougères.
Special features
2022 is the first vintage to be bottled; previously the estate sold this Aligoté exclusively in bulk.
