About this wine
Character
A dry Chardonnay at 13.0% ABV that holds density and cool acidity together. The estate's signature remains understated: minimal intervention, no fining, no filtration. What ends up in the glass comes from the vineyard, not the cellar work.
Terroir and origin
Meursault lies in the Côte de Beaune. The Buisson family has farmed its plots from Saint-Romain since 1947, on limestone soils with varying exposures. This bedrock gives the grapes the mineral complexity the estate is known for.
Grape variety and vinification
Pure Chardonnay. Gilles Buisson ferments spontaneously with natural yeasts and forgoes fining and filtration – an approach that demands absolute cleanliness in the vineyard and lets each plot's individual profile come through.
On the palate
The wine shows ripe yellow fruit and fine citrus notes, alongside a mineral freshness. The texture is dense and silky, the cool acidity carries the wine into a long finish while holding its tension.
Food pairings
With fine fish: sole meunière, pan-fried turbot with porcini foam, or lobster in butter sauce. Equally good with Bresse chicken in cream sauce and with mature Comté.
Special features
Henri Buisson introduced biodynamic practice as early as 1990, at a time when it was still considered eccentric. The younger generation has since brought even greater precision and elegance to the estate's white wines.
