About this wine

Character

A Pinot Noir whose nose remains fine and restrained. Sour cherry and morello cherry lead, joined by ripe red berries and a hint of blood orange juice. The oak stays in the background. Finesse is the theme here, not volume.

Terroir and origin

The Croix Sorine vineyard adjoins the 1er Cru La Maladière to the northwest, within the Santenay appellation. The grapes come from purchase, which is why the wine is released under the label of Maison Henri & Gilles Buisson. The family farms its own 13 hectares in Saint-Romain, Santenay and Beaune biodynamically; Henri introduced this approach in 1990.

Grape variety and vinification

Pure Pinot Noir, 13.0% ABV, dry. Hand-harvested, partially destemmed, spontaneous fermentation in stainless steel tanks, with punch-downs and pump-overs on the cap. Malolactic fermentation takes place spontaneously in barrel. Ageing lasts ten to twelve months in barriques and tonneaux of 228, 350 and 500 litres, of which at most 10% are replaced each year. Fined with bentonite, only very lightly filtered.

On the palate

Silky and elegant in its red fruit, fine-grained and firm in tannin, precise in acidity. Freshness and pure fruit come first, with the oak framing them discreetly.

Food pairing suggestions

With whole roasted porcini with pancetta, a frittata with black trumpet mushrooms and chanterelles, or pappardelle with hare ragù.

Special features

The purchased grapes are Ecocert organic certified and additionally Demeter biodynamic certified. The wine is tasted daily, and Frédéric Buisson racks the barrels whenever he deems it appropriate. Sulphur is added only at bottling, at no more than 40 to 50 mg/l total sulphite.
