About this wine

Character

A Cava that reveals its origin more clearly than its production method: purist, clear, reduced to the essentials. The long lees ageing gives it depth without making it heavy, and the fruit defers to the saline, chalky undertone.

Terroir and origin

Font de Jui comprises twelve vineyard sites at 185 to 228 metres, between the Anoia river and the hills of Mas Escorpí. The limestone soils with fossil deposits around Sant Sadurní d'Anoia have been farmed by the Batlle i Gramona family since 1850; since 2000, all 150 hectares have been under organic cultivation, managed according to biodynamic principles.

Grape variety and vinification

The 2017 vintage cuvée consists of 41% Xarel·lo, 39% Macabeu and 20% Parellada. Ploughing is done with horses, harvesting by hand. After traditional bottle fermentation, the wine aged 84 months and more on the lees, sealed with a natural cork stopper, in the underground cellars where over four million bottles rest. Bottled as Brut Nature, meaning without dosage, at 12.0% Vol.

On the palate

On the nose, sourdough bread, fresh yeast and delicately toasted almonds, alongside macadamia and hazelnut, hints of nashi pear and cantaloupe melon, as well as dried marjoram and tarragon. The mouthfeel is silky, the wine remains lean, dry and precise; a saline minerality gives it contour and length. The finish feels fresh, almost cleansing.

Special features

First produced in 1951. The Demeter logo on the label attests to the biodynamic work. Javier Gramona and his team regard their vineyards as a living ecosystem, in which every intervention is carefully considered.
