About this wine
Character
A dry, coolly poised Cava built on tension and clarity. The long lees ageing brings calm to the wine without dampening its freshness. The overall picture stays lean and taut, with a clear expression of origin and structure.
Terroir and origin
The vines grow in the chalky soils around Sant Sadurní d'Anoia in the Penedès, shaped by limestone and fossil deposits. This origin shows openly in the glass: plenty of chalk and a saline edge that structures the aromatic profile. The 2019 vintage began dry and arid; from April onward, rainfall was evenly distributed, with temperatures staying below those of previous years.
Grape variety and vinification
The blend combines 58% Xarel·lo, 33% Macabeu, 5% Parellada and 4% Chardonnay, each variety vinified separately. After traditional bottle fermentation, the wine rested 50 months on the lees before disgorgement.
On the palate
On the nose, dried wildflowers, straw, chervil, marjoram, tarragon and sage, joined by zest of lemon, kaffir lime and bergamot, underpinned by green pear and white peach. The lees show as a note of savoury pastry, present but never dominant. The palate mirrors this picture without deviation, tight and precise, light-footed rather than filling. The finish brings together citrus and crumbly pastry notes.
Food pairing recommendations
As an aperitif, with oysters and seafood, light tapas, delicately spiced fish dishes and goat cheese.
