About this wine
Character
A Cava that doesn't chase effect: lean, filigreed and finely structured, carried by an energetic nerve that is clearly felt without ever becoming loud. It demands space and only truly opens up on the second glass, when nuttiness, austerity and maritime salinity move to the fore.
Terroir and origin
The vines grow in Penedès around Sant Sadurní d'Anoia on soils of limestone and fossil deposits. Gramona converted its entire 150 hectares to organic farming in 2000, at the time still an exception in the region. The wine belongs to Aliances per la Terra, an association of biodynamic winegrowers led by the house, bringing together numerous vineyards into a single whole.
Grape variety and vinification
63% Xarel-lo, 32% Macabeu, 5% Parellada. The whole grapes are pressed and around 50% extracted; 15% of the batch is aged before the second fermentation in 300-litre oak casks. The second fermentation follows the family's dosage recipe, here set at 3 g/l. A minimum of 24 months on the lees is required; this batch had 36. 12.0% ABV.
On the palate
On the nose, initially veiled, then increasingly precise: white blossom and apple-almond blossom, a pronounced salinity recalling savoury pastry, chalk and shellfish, along with lemon zest, freshly cut nashi pear, pomelo and toasted brioche with salted butter. On the palate it all condenses in a compact way: salinity, tension and an almondy component carry through with a light touch, the mousse stays restrained, minerality and spice take the lead. The finish is long and saline.
Distinctive features
The label carries the Demeter logo. Bottle fermentation follows the traditional method; the underground cellars hold over four million bottles.
