About this wine

Character

The Chaillots Hautes Vignes Premier Cru Extra Brut 2019 is a single-varietal Blanc de Blancs from Écueil, built entirely around freshness and drive. Intense straw yellow, a calm, fine mousse, with lemon zest, flint and chalk on the nose, plus a subtle hint of wood and pastry. Not an aromatic spectacle, but a clear statement.

Terroir and origin

Écueil lies in the Petite Montagne de Reims, between limestone slopes and a small forest. The Chaillots plot sits on sand, the Hautes Vignes plot on loose clay. Géraldine and Richard Desvignes took over the 8.5 hectares of Premier Cru in Écueil and Les Mesneux in 2008 and farm them biodynamically: no herbicides, preparations made from nettle, horsetail and valerian, hand harvesting.

Grape variety and vinification

Chardonnay, spontaneously fermented with wild yeasts, then aged nine months in 228-litre barrels. The oak used comes from the forest of Écueil, just a few hundred metres from the vines. Neither stabilised, filtered, nor fined. Bottled in July 2020, disgorged on 10 May 2023, dosage of 2.5 grams.

On the palate

Great intensity, electrifying acidity, minerality and citrus notes of juice, zest and pips. The texture feels chalky, with wood and sourdough notes finely balanced. Only in the long finish does the dosage reveal itself as a touch of lemon sorbet, picking up the Chardonnay fruit reminiscent of white-fleshed stone fruit. 12.5% ABV.

Food pairing suggestions

Sea bass carpaccio with citrus fruits and crisp vegetables, scallop on cauliflower purée with romanesco and hazelnuts, or langoustine tossed in seaweed butter with ratte potatoes and lemon.

Special features

Barrel wood sourced from the estate's own forest, 40- to 70-year-old vines on the best plots, nearly three years between bottling and disgorgement.
