About this wine

Character

A Gemischter Satz from the Wachau, vinified dry at 11.0% ABV and pouring cloudy into the glass: deep golden yellow with amber reflections. The nose exhibits depth and complexity, while the palate is challenging and engaging.

Terroir and Origin

Nikolaihof in Mautern is considered Austria's oldest winery, built upon the foundations of the Roman fort Favianis dating back to 63 BC. The Saahs family has cultivated this estate since 1894, following biodynamic principles according to Demeter standards since 1971. The 22 hectares function as a vibrant living organism: wild herbs among the vines, bees, and green lizards on the stone terraces.

Grape Variety and Vinification

In their s e m i c o l o n project, Katharina Salzgeber and Nikolaus Saahs explore the potential of Gewürztraminer and Riesling, questioning how these grape varieties respond to an altered harvest date, alternative processing, and different ageing methods. Much like the semicolon, which defies rigid grammatical conventions, these wines cast off the corset of the familiar.

On the Palate

Intense on the nose: wine yeast, ripe apples, apple compote, quince, hay, dried blossoms, honey, vineyard peach, peach stone, and wild herbs. Precise on the palate, dry and yeasty-spicy—a refreshing style featuring depth and a beautifully smooth, melting texture.

Food Pairings

This wine pairs exquisitely with purist, natural cuisine highlighting herbs and vegetables.

Special Features

Nikolaihof is Demeter-certified and regarded as the oldest Demeter winery in the world. The Roman vaulted cellar houses a 350-year-old wooden basket press, and the musts ferment spontaneously in large Slavonian oak casks.
