About this wine

Character

The Olla Blanc VdF 2025 is Domaine Matassa's light white: 10.5% ABV, dry, made from Macabeu and Muscat. Tom Lubbe harvests early, because he wants to make wines he himself drinks daily, without effort. Where the Roussillon usually relies on ripeness, here freshness takes center stage.

Terroir and origin

Tom and Nathalie Lubbe farm 20 hectares in the hills around Calce and Espira-de-l'Agly, high-altitude garrigue plots up to around 450 metres, surrounded by scrubland, cedars, fig trees and wild rosemary. The soils consist of schist and marl, including black schist and black marl. Many of the estate's vines are between 60 and 120 years old.

Grape variety and vinification

Macabeu gives the cuvée structure, while Muscat contributes its floral aromatics; harvest at Matassa sometimes begins as early as the start of August. The estate's white wines ferment on the skins and spontaneously, with ageing in wood, clay, concrete and above all fibreglass, which Tom Lubbe considers more neutral than stainless steel. No sulfur has entered the cellar since 2015, and the wines are neither fined nor filtered. Its classification as Vin de France allows complete freedom here.

On the palate

Bright, juicy and taut. Yellow peach and lemon zest meet blossom honey, orange blossom and a herbal spiciness, carried by vibrant acidity and a dry, faintly saline finish.

Special features

Ecocert-certified farming with cover cropping, compost and manual work; the earthworms have returned. The Magnum ages more slowly than the standard bottle.
