About this wine

Character

Ruby red with brilliant highlights. The nose reads like a still life: game, a note of blood and iron, alongside allspice and juniper berry, then yellow apple, orange, blueberry and cranberry, with a touch of umami.

Terroir and origin

The Pajoré single vineyard lies in Treiso and stands for elegance within strict balance. It is one of five crus that Sottimano farms across the communes of Neive and Treiso. Rino Sottimano acquired the estate at Cottà in the late 1960s and planted most of the vineyards himself during the 1970s and 80s; many vines are now fifty to sixty years old. The estate is now run by Andrea, Elena and Claudia Sottimano.

Grape variety and vinification

Single-varietal Nebbiolo, spontaneously fermented with wild yeasts from the vineyard and cellar. Andrea Sottimano leaves the must on the skins for up to sixty days. Malolactic fermentation only begins once the cellar warms naturally in spring, and can sometimes continue into autumn. Bottled without filtration or fining.

On the palate

Open-hearted and juicy on entry, then delicately structured, with finely woven tannins. The 14.5% ABV shows as pleasant warmth rather than weight. The finish is enormously long and fruity, ethereal.

Food pairings

Sourdough ravioli with dried tomatoes, olives and wild fennel in thyme butter, grilled mackerel with a ragout of tomatoes, dried plums and marjoram, or corn-fed chicken with black trumpet mushrooms and shallots.

Special features

Organically farmed for over forty years: no herbicides, no synthetic fertilisers. The grass between the rows is mown two to three times a year, with every other row ploughed in autumn. Almost twenty hectares of Nebbiolo, yielding five single-vineyard Barbarescos.
