About this wine
Character
A contemporary-minded red wine: transparent, juicy, light-footed, leaving room for the flavours of today's cuisine. Dark chocolate, earth and sour cherry layer over one another without the wine ever becoming heavy.
Terroir and origin
The grapes grow near Cornudella de Montsant in the north of the appellation, at 700 metres above the Mediterranean. The soil is red clay laced with veins of gypsum. The altitude brings cool nights and keeps the fruit fresh. The 50- to 60-year-old Garnacha and Cariñena vines stand on a biodynamically farmed finca.
Grape variety and vinification
Garnacha and Cariñena in equal parts. The Garnacha ferments with wild yeasts in clay amphorae, together with a little Garnacha Gris from the same vineyard, while the Cariñena ferments spontaneously in steel tank. Nothing is destemmed, nothing is pumped over; only foot-treading moves the must. After six months of separate ageing, the two components are blended and bottled unfiltered. Oak is never used.
On the palate
The chocolate from the nose recedes, the earthy tones remain, carried by light bitter notes. The tannin is restrained, in just the right measure. Alongside it, morello cherry and fresh almond, both bright and dark at once.
Food pairings
Cured beef fillet with smoked celeriac, shimeji mushrooms and mushroom stock, pan-fried monkfish with paprika jus and steamed parsley root, and beetroot carpaccio with lamb's lettuce and pan-fried goat cheese.
Special features
Tatjana Pećerić toured France as a dancer with a Serbian folklore troupe, studied oenology in Montpellier at the age of 24, and today runs the cellar at Terroir al Límit. Coreografia is her own project, with 2018 as its first vintage. Pas de deux refers in ballet to a dance for two, often the closing act of a performance; here it is danced by the two grape varieties.
