About this wine
Character
An Aligoté whose grapes remain on the vine until December, drying there like raisins. What results, Pierre and Louis Trapet bottle in the half bottle: a concentrated white wine at 13.0% vol. that rewards time in the glass.
Terroir and origin
The 60 ares in the Sous-Châtelet climat lie in Auxey-Duresses in the Côte de Beaune, named after the Montagne du Châtelet and facing north. The Aligoté was planted in 1934; the roots have since reached deep into the limestone. The parcels came to the family through Justine, Louis's wife, whose family home lies at the foot of the mountain. In total, the brothers farm 1.8 hectares around Auxey-Duresses.
Grape variety and vinification
Aligoté, long regarded in Burgundy as the second white grape, stands alone here. For the Passerillé, the grapes remain on the vine until December, until sugar and aromas are concentrated. Pressing takes place in the family cellar in Gevrey-Chambertin, a former coaching inn. The wine matures unfined and is bottled unfiltered.
On the palate
Deep gold with amber highlights. On the nose, dried apricot, candied citrus peel, beeswax and honey, followed by almond and a fine oxidative note. On the palate, concentrated and layered, the density of the dried berries carried by vibrant acidity, the finish long and spicy.
Food pairings
With foie gras and goose liver terrine, with mature Comté, Époisses and Roquefort. Also with caramelised onion tart and Tarte Tatin with caramelised apples.
Special features
From the same vineyard, the brothers vinify three wines; this is the dried one, a rarity in the 375ml bottle. In the vineyard, the plough is used instead of herbicides, with biodynamic work, hand harvesting and early-limited yields.
