About this wine

Character

Pale cherry red with orange highlights and a satin-matte sheen. The Salvadi shows the classic side of Pinot Grigio at Scarbolo: phenolically marked, medium-bodied, with a silky texture and subtly smoky spice. Lara Scarbolo, who has run the roughly 30-hectare estate in Lauzacco together with her brother Mattia since 2020, wants to give the variety "a new and high-quality meaning".

Terroir and origin

The grapes come from the Codis vineyard in the Grave subregion, grown on flat land not far from the Torre river. The soil is rich alluvial deposit made up of dolomitic limestone sediments with a strongly silty component.

Grape variety and vinification

100 percent Pinot Grigio, hand-harvested on 7 September, with part of the grapes deliberately still underripe. 15 days of skin contact, fermentation in open tonneau, followed by 27 months of ageing in the same vessel. The tannins extracted from the skins are meant to give the wine freshness, as does the underripe portion of grapes. 12.5% by volume, dry.

On the palate

On the nose, red apple with pips and skin, along with candied ginger, green almonds, peach stone, dried hay flowers and mild herbs. On the palate, juicy fruit and rich extract, a medium-bodied palate with silky texture. The ripe acidity is tightly woven with the austere tannin, carrying the wine into a long, fruit-driven finish.

Special features

Valter Scarbolo founded the estate in 1982 in Friuli. His children Lara and Mattia took over in 2020, immediately switched to organic farming with biodynamic influences, downsized the estate by almost 50 percent and streamlined the range. Their wines age for four to five years before coming to market.
