About this wine
Character
The Pinot Noir de la Côte des Bar Brut Nature 2020 is a single-varietal blanc de noirs from the southern Champagne region, bottled with no dosage. In the glass it shows pale gold with a coppery shimmer. The long lees ageing gives it a creamy texture, the acidity stays taut, and the chalky coolness carries the red fruit.
Terroir and origin
The vines grow around Noé-les-Mallets in the Côte des Bar. The subsoil is Kimmeridgian limestone containing fossils of the oyster Exogyra virgula, around 150 million years old. The slopes sit between 280 and 320 metres in altitude, facing south-east.
Grape variety and vinification
Single-varietal Pinot Noir, made as a vintage wine. Delphine Brulez, an agricultural engineer and oenologist, runs the house founded in 1910 as its fourth-generation head. She separates the musts across four pressings, finer than usual, and ferments with wild yeasts in used Burgundy barrels. The wine then rests at least five years on the lees – Champagne regulations require only three.
On the palate
Dry and precise. Cherry and raspberry meet brioche and hazelnut, behind which lies a chalky, slightly herbal note. The finish is saline and long; with no dosage, there is no cushion for the wine to hide behind.
Food pairings
Oysters, cured char and tuna tartare pick up its chalky side. With duck breast with cherries, mushroom risotto or roast chicken breast with herbs, the Pinot Noir's body comes into its own. Among cheeses, aged Comté and Chaource are a fine match.
Special features
All of the house's champagnes are vintage wines and Brut Nature. Organic-certified since 2017, farmed organically since 2011; the soil's mycorrhizal content rose from 18 to 70 percent under Delphine Brulez. Pruning follows the Simonit-Sirch method, with a third of vineyard work devoted to the shears. Delphine Brulez belongs to the winegrowers' collective "Les Fa'bulleuses".
