About this wine
Character
A deep, dark Pinot Noir that places earth ahead of fruit. On the nose, notes of tar, sumac and pepper, followed by forest floor, undergrowth, tobacco and fermented cardamom. This spice meets the juicy fullness of ripe plum, cherry and dark raspberry, along with rose petals and violet. Dry, 13.0% vol.
Terroir and origin
The En Bœuf parcel lies in the heights above Pommard, just before Nantoux. At these altitudes the grapes ripen late, preserving freshness and elegance. Boris Champy took over the domaine in 2019 from Didier Montchovet and continues the biodynamic work practised on this land since 1984.
Grape variety and vinification
Pinot Noir trained in Guyot, with a planting density of around 10,000 vines per hectare. The harvest took place after 15 September, so after the heatwave, alongside the grapes from the Hautes-Côtes. Boris Champy destemmed 30% and left 70% as whole clusters, extracting gently and ageing the wine for twelve months, one third in new barrels, two thirds in one-year-old wood.
On the palate
At the centre, a dark, ripe fruit core surrounded by fine-grained, perfectly judged tannin. Add to this the fine, charming sweetness this parcel shows year after year. A Pommard with both roundness and firmness, with structure, depth and length, saline and piquant on the finish.
Distinctive features
In 1984, Domaine Boris Champy became the first estate in Burgundy to be Demeter-certified, its logo featured on the label. The high proportion of whole clusters and the late harvest after the heatwave define the freshness of this vintage.
