About this wine

Character

De Sousa in Avize works on the principle that great Champagnes are made in the vineyard, not in the cellar. The Réserve Extra Brut demonstrates this as a Blanc de Blancs from Grand Cru grapes: sparingly dosed, crystalline, with no sweetness to mask anything.

Terroir and origin

The house's 9.5 hectares lie in Avize, Cramant, Oger and Le Mesnil-sur-Oger, the Grand Cru villages of the Côte des Blancs. The average vine age exceeds 45 years. Beneath them lies the chalk, which stores and releases water and gives the Chardonnay its chalky tension.

Grape variety and vinification

Pure Chardonnay. Blending with reserve wines gives this non-vintage cuvée its depth. Oak barrels at the house serve not to impart woody aroma but to add texture and substance. Ageing takes place in cellars hewn into the chalk at a constant 10 °C; the double magnum format slows this maturation further. Extra Brut here means: very low dosage.

On the palate

Lemon zest, yellow pear and white peach, underscored by brioche, almond and a chalky streak. The wine remains dry and linear, the acidity carries it, the mousse is fine-grained and creamy, the finish salty and long. 12.5% vol.

Food pairings

With oysters and a platter of fine seafood, with scallops in lemon butter, lobster or turbot. Also with aged Comté and Parmesan.

Special features

Erick De Sousa converted the estate to organic farming in the late 1990s; organic certification followed in 2010, Demeter recognition in 2013; the Demeter logo appears on the label. Today Charlotte, Valentin and Julie De Sousa run the house.
