About this wine
Character
A purist single-vineyard wine with a smoky, dark nature. Beneath the delicate reduction lies an aromatic profile that keeps evolving with air: cacao nibs, dried quince, grapefruit zest, alongside hazelnut skins and salted butter. A wine that calls for large glasses and time.
Terroir and origin
Ried Rossberg is an Erste STK® single vineyard in Southern Styria, with steep slopes facing southeast to south at 370 to 460 metres above sea level. The vines, up to 36 years old, root in sparse, limestone-rich Opok soils. Tement farms these plots biodynamically, with the conversion begun in 2017; the estate is a member of respekt-BIODYN.
Grape variety and vinification
100% Morillon, as Chardonnay is known in Styria. The wine fermented spontaneously and matured for 30 months on the fine lees in small French oak barrels. It was bottled unfiltered and sealed with natural cork, dry, at 14.0% vol.
On the palate
The entry is neat and utterly free of fat: sinewy, tall-framed, well defined. The fruit stays pared to its essentials, the compact extract sits within firm phenolics carrying a distinctive grapefruit twist. In the finish, the dark side of cacao and nut returns, underscored by saline notes and a citrus fizz.
Food recommendations
With pan-seared turbot, veal sweetbreads with morel cream, or mature Comté.
Special features
Layered and clearly structured, with potential well beyond 2040.
