About this wine
Character
A single-vineyard wine with distinctive contours, built for maturity and longevity. The nose initially shows pronounced reduction; those who decant vigorously and give the wine time will be rewarded with orange zest and orange blossom, yellow kiwi, passionfruit leaves, and tomato leaf, joined by red gooseberries and pink grapefruit. The colour is a deep straw yellow, fading to silver at the rim.
Terroir and Origin
Ried Sernau König is classified as a Grosse STK Lage. Its soils consist of deep, lime-free gravel—unusual for Southern Styria and responsible for the wine's aromatic clarity and structure. Weingut Tement in Ehrenhausen farms the site organically (AT-BIO-402), with vines that are 26 years old.
Grape Variety and Vinification
Sauvignon Blanc from selected grapes. Following spontaneous fermentation, the wine matured for 28 months on the fine lees in large oak casks and was bottled without filtration, sealed with a glass stopper. 14.0% ABV, dry.
On the Palate
The wine enters slender and precise. The piquant acidity stretches from the initial attack through to the long finish, where it meets grippy, tart phenolics that provide backbone and poise. Cedary-spicy, with a tart citrus grip and immense vitality. It continues to gain quality over several days in an open bottle.
Food Pairings
Scallops with citrus butter sauce, pan-fried turbot with fennel vegetables, or marinated trout with herbs, as well as veal tataki and boldly seasoned poultry dishes.
Special Features
Great ageing potential. A decanter and large, mouth-blown glasses are not merely decorative here, but essential for allowing the wine to open up.
