About this wine
Character
A grower's sparkling wine with no dosage and no sulphur whatsoever, which is precisely why it tastes of its soil. The nose is invigorating and saline at once: salted lemon, ripe apple and vineyard peach, followed by yeast, a hint of grain, light tobacco and milky coffee. With air, oyster shell and sea breeze notes emerge.
Terroir and origin
The Wachenheimer Odinstal monopole vineyard lies 350 metres above the Rhine valley, a hollow enclosed by ten hectares of mixed forest with no neighbouring vineyards. Across five hectares, four types of rock sit side by side: basalt, shell limestone, Keuper marl and yellow variegated sandstone. The base wine for this sparkling wine grew predominantly in a younger vineyard on shell limestone. At this altitude, the vines ripen 20 days later than in the valley.
Grape variety and vinification
Pure Riesling. Primary and malolactic fermentation took place spontaneously in stainless steel, with tirage following in summer 2023 using the traditional method with Demeter beet sugar and organic sparkling-wine yeast. No yeast nutrients, no riddling aids, no sulphur, not even at disgorgement. It is bottled with no dosage, with a slight haze from the lees and 12.5% ABV.
On the palate
Bone-dry, with fresh fruit and razor-sharp minerality. The acidity remains invigorating, carried by fine, lively bubbles that whet the appetite.
Food pairings
Oysters and fresh seafood, ceviche or sashimi, as well as Viennese schnitzel, goat cheese tartlets and roasted almonds.
Special features
Odinstal has farmed biodynamically since 2006 and has been Demeter-certified since 2013; the Demeter logo appears on the label. In the cellar, estate manager Andreas Schumann follows the principle of non-intervention: spontaneous fermentation, extended lees ageing, minimal use of sulphur. This bottle is a 1500-millilitre magnum.
