About this wine
Character
A natural wine built on freshness: primal, spicy and wild, yet dry and remarkably light at 10.5% ABV. The early harvest practised by Tom Lubbe in Roussillon keeps the alcohol low and the wine lively.
Terroir and origin
Tom and Nathalie Lubbe farm 20 hectares in the hills around Calce and Espira-de-l'Agly. The plots lie at altitude, up to around 450 metres, in the midst of garrigue made of scrubland, cedars, fig trees and wild rosemary. The soils are schist and marl, black schist and black marl. Many vines have stood there for 60 to 120 years.
Grape variety and vinification
Single-varietal Macabeu from biodynamic farming, the vineyard work is Ecocert certified. The grapes are harvested early and fermented spontaneously; the estate's white wines ferment on the skins. Bottled unfiltered and unfined, with no added sulphur.
On the palate
The colour is a deep, slightly hazy amber. The carafe does it good: with air it releases ethereal wild herbs, apple, citrus and sweet mango. On the palate it is fresh, with tension and grip, the saliva flows, the appetite is stimulated.
Special features
Since 2015, no cuvée from Domaine Matassa has used sulphur. Tom Lubbe, who trained in Calce under Gérard Gauby, works on the health of his soils: cover crops, compost, patient manual labour. The earthworms are back.
