About this wine
Character
A fine, fragrant Sancerre of intense straw yellow, already open and inviting while young: white blossoms, honeysuckle and white tea over white-fleshed pome and stone fruit, underpinned by limestone, chalk, herbs, oyster shell, mint and a hint of ash. What Matthias Planchon calls "l'eau de roche", rock water, runs through the entire wine.
Terroir and origin
Les Herses lies in Ménétreol-sous-Sancerre: two hectares of clay and flint, facing south-east. Planchon farms 0.98 hectares of it, partly planted with Pinot Noir. The Sauvignon Blanc vines average 47 years old and are planted at a density of 7,700 vines per hectare. His 5.5 hectares across ten parcels have belonged to the family for generations and have been farmed biodynamically since 2018.
Grape variety and vinification
Pure Sauvignon Blanc, hand-harvested, slowly pressed in a pneumatic press and cold-settled below 10 °C for around 36 hours. Fermentation proceeds spontaneously, 40% in stainless steel tank and 60% in amphorae and 600-litre barrels. The wine ages for two years on fine lees in the same vessels, then rests for a further year in stainless steel and is bottled unfiltered according to the lunar cycle.
On the palate
Precise, clear and powerful, carried by a lean, pure, vibrant acidity with fine bitterness and zestiness. Add to that green-ripe stone fruit and lime, followed by light oak notes. With warmth and air, the wine becomes more fragrant and airy, taking on a touch of iodine-tinged breeze: power that stays polished.
Special features
Each parcel is vinified separately, and only single-vineyard wines are bottled, 22,000 bottles a year. The label reads "Vin Bio et Biodynamique, cultivé sur sols vifs" along with AB/EU organic certification. The name carries history: in 1868, Jules Émile Planchon discovered phylloxera and saved European viticulture through grafting onto American rootstock.
