About this wine
Character
The Seconde Nature SN22 is an artisanal Champagne from Chamery that comes across as open and inviting, finely spiced and sensuous, yet fresh and precise. On the nose, marzipan and pastry, kumquat, grapefruit and Meyer lemon, together with blond tobacco, graphite and chalk.
Terroir and origin
The fruit grows in the Chamery single vineyards les Vigneules, les Spectres and les Caquerets, slopes facing south-east in the Montagne de Reims. The topsoil consists of chalky clay with limestone pebbles, the subsoil of sands and fossil shells. Chamery is classified as Premier Cru; here Cyril Bonnet's grandparents still dug the cellars with shovel and pickaxe.
Grape variety and vinification
45 percent Pinot Noir, 40 percent Chardonnay, 15 percent Meunier. The base wine from the Cœur de Cuvée fermented spontaneously and aged nine months in four-year-old barrels of 228 and 400 litres; malolactic fermentation took place. Bottled in May 2023, disgorged in September 2025, with no added sulphur and no dosage.
On the palate
Spicy, with a deliberate touch of oxidation that shows as soft apples and their skins, along with bitter-zesty and tobacco-like notes. The texture remains creamy and silky, with juiciness, energy and vibrant minerality. Despite the absence of dosage, a supple extract sweetness carries through, accompanied by a faint note of warm toast. The perlage is lively to fine, the finish lightly saline.
Food pairing recommendations
With seared scallops, oysters, shellfish, mackerel sashimi or mature Comté.
Special features
The Seconde Nature is Cyril Bonnet's declaration of commitment to natural wine, entirely without added sulphur and unfiltered. Since returning to Chamery in 2013, he has relied on spontaneous fermentation with wild yeasts and immediately began the conversion to organic farming. The estate's good ten hectares are spread across around 50 parcels, the vines are 35 to 80 years old, and each parcel is vinified separately.
