About this wine
Character
A vintage Champagne with no padding: lean and precise in structure, yet ripe and full in fruit. The tension comes from acidity that was never softened, the depth from extended lees ageing. Energetic and mineral in expression.
Terroir and origin
The grapes come from a sandy-clay vineyard near Chamery. Champagne Solemme is based in Villers-aux-Nœuds, in the heart of the Petite Montagne de Reims, a cool corner with plentiful rainfall. Olivier Langlais took over the family estate from his father in 2006 and founded the Solemme brand in 2009. The vines are ploughed with a horse, and weeding is done by hand.
Grape variety and vinification
Pure Chardonnay from a single plot. The base wine ferments spontaneously and undergoes no malolactic fermentation; there is no chaptalisation, filtration or tartrate stabilisation. After at least 36 months on lees, disgorgement takes place without added sulphur. It is bottled as Brut Nature, meaning entirely without dosage.
On the palate
Six years of ageing carry a fine, elegant mousse. Beneath it, the untouched acidity does the work: it delivers pressure and freshness, underlined by tart citrus notes and citrus peel. On the nose beforehand, bletted apple, fine pastry and a minty coolness.
Food pairings
Oysters with ginger-tabasco vinaigrette, sardine escabeche or scallops with wild garlic and cream.
Special features
Langlais farms biodynamically, applying the preparations at night according to the lunar calendar; even disgorgement follows the moon. Each vintage is bottled separately, with no blending across years. The estate's annual production is around 30,000 bottles.
