About this wine
Character
A Riesling that draws its impact from tension, not power: 12.5% abv, a taut, cool drive, crystalline clarity. Lemon zest and white peach lead the way, underpinned by meadow herbs and a stony, savoury undertone. In the six-litre format, the wine matures more slowly and retains its youthful freshness for far longer.
Terroir and Origin
The Steiner Hund vineyard is located near Stein an der Donau in the Wachau. The winery itself is built upon the foundations of the Roman fort Favianis from 63 BC; the Saahs family has been managing Nikolaihof since 1894. The 22 hectares are cultivated as a living organism: wild herbs among the vines, bees, and green lizards on the stone terraces.
Grape Variety and Vinification
100% Riesling. Pressed using a roughly 350-year-old wooden beam press in the Roman vaulted cellar, the must ferments spontaneously, and the wine is matured in large Slavonian oak casks. Patience is a principle here: some of the estate’s wines remain in oak for a decade or more.
On the Palate
Dry and straight-lined, with vibrant acidity and a delicate apricot note supported by a savoury minerality. The moderate alcohol keeps the wine nimble, while the finish lingers with lasting precision.
Food Pairings
Steamed freshwater fish with herbs, trout in almond butter, asparagus with hollandaise sauce, pan-seared sea bass, or veal escalope. It also pairs wonderfully with Asian dishes featuring ginger and lemongrass, and in this large format, it is a magnificent choice for large gatherings.
Special Features
Biodynamic farming according to Demeter standards since 1971, making it Austria’s first certified biodynamic winery and the oldest Demeter estate in the world. The six-litre format is rare and significantly extends its ageing potential.
