About this wine

Character

A Riesling of clear-cut precision. Lemon, green apple, and white peach hover over a cool, linear acidity, backed by herbal spice, floral nuances, and a stony minerality. At 12.5% ABV, the wine remains lean: the estate seeks elegance rather than concentration, giving the fruit space instead of sheer power.

Terroir and Origin

The Steiner Hund vineyard is part of the stone-terraced landscape of the Wachau. The winery itself, located in Mautern on the foundations of the Roman fort Favianis dating back to 63 BC, is considered the oldest wine estate in Austria; the Saahs family has cultivated it since 1894. The 22 hectares are managed as a living organism, with wild herbs between the vines and European green lizards on the stone terraces.

Grape Variety and Vinification

100% Riesling. Nikolaihof has been farming biodynamically according to Demeter standards since 1971. In the Roman vaulted cellar stands a 350-year-old wooden beam press made of oak; the musts ferment spontaneously and mature in large Slavonian oak casks, sometimes for years. The large double magnum format further slows down the wine's evolution, giving the 2017 vintage plenty of time ahead.

On the Palate

Dry, with a juicy core of fruit and vibrant acidity providing the backbone. The wine remains light on its feet without ever feeling thin, concluding on a long, saline finish.

Food Pairings

Ideal with Wiener Schnitzel, Tafelspitz, sole in butter, or asparagus. It also pairs wonderfully with Vietnamese summer rolls and mildly spiced curry dishes.

Key Features

The world's oldest Demeter-certified winery and to this day the only certified biodynamic producer in the Wachau. The 3-litre format is rare and makes this bottle the perfect choice for a larger table.
