About this wine
Character
A matured dry Riesling that draws its effect from calm rather than volume. The primary fruit has faded, leaving secondary and early tertiary notes of persimmon, yellow plum and pale tobacco leaf, along with a fine oxidative note that takes nothing away from the wine's freshness.
Terroir and origin
The vines of the Ried Steiner Hund grow on a thin layer of humus, beneath which hard primary rock begins immediately. Nikolaihof in Mautern, Austria's oldest winery, has farmed its 22 hectares in the Wachau biodynamically to Demeter standards since 1971.
Grape variety and vinification
Riesling, spontaneously fermented, then aged four years on fine lees in large barrels of between 2000 and 5000 litres. Bottled on a fruit day. 12.5% vol., 7.1 g/l acidity and 1.6 g/l residual sugar produce a wine that feels leaner than these figures suggest.
On the palate
Firm and juicy, with a long arc of tension driven less by acidity than by stony precision and finely woven phenolics. Yellow fruit, chervil and lemon balm, turmeric and white pepper, along with roasted nuts. The finish remains exceptionally long, ending in cold smoke and wet stone.
Food pairings
Trout in almond butter, cold roast pork with turmeric mayonnaise, braised spring turnips on lentils and spicy hard cheese; a vegetable curry with yellow beetroot also finds a natural fit here.
Special features
Nikolaihof is considered the oldest Demeter winery in the world and the only certified biodynamic estate in the Wachau. The musts ferment in large Slavonian oak barrels in the Roman vaulted cellar, home to a 350-year-old tree press.
