About this wine
Character
A Sauvignon Blanc of quiet elegance that speaks first of long lees ageing, then of the small-berried grapes. Stony, austere herbal spice lays the foundation: black cumin, coriander, fennel greens and grapefruit zest. Above this sit sourdough crust, chervil and citrus blossom. A distinctive personality without the usual aromatic excess.
Terroir and origin
Fosilni Breg, the "hill of fossils", sits at 340 to 480 metres above sea level right next to Zieregg; the Tement family farms these plots on the Slovenian side under the name Ciringa. The coral-limestone soils are rich in fossilised marine creatures, complemented by a layer of clay-rich marl, also known as flysch or opok, as well as fertile brown earth. The vines grow in austere ground.
Grape variety and vinification
Pure varietal Sauvignon Blanc from particularly small-berried grapes, which enter the Reserve only in exceptional years. After extended skin contact, the wine fermented spontaneously, aged 30 months on the fine lees and was bottled unfiltered. 13.0% ABV, dry.
On the palate
The floral citrus theme from the nose continues, moving from lemon through mandarin to orange, juice like zest oil. Creamy and expansive, with a mature character, a solid base and a precise peak. Everything sits in its place, taut and disciplined.
Distinctive features
The Ciringa line carries the Demeter logo. The conversion to biodynamic farming began in 2017 and was completed in 2022 with Demeter certification; the estate also belongs to Respekt-BIODYN. In the cellar, restraint, spontaneous fermentation and long lees ageing define the style.
