About this wine
Character
A dense, concentrated Sauvignon Blanc where the slow maturation on the lees takes precedence over the fruit, giving it a serious and mature demeanour. The nose opens with passion fruit and mango, followed by grilled pineapple, apricot, and peach. Layered above is a broad herbal stratum of mint, coriander, thyme, lemon balm, and chervil that invigorates the wine. The limestone subsoil makes its presence unmistakably felt.
Terroir and Origin
The Kapelle parcel lies above the winery and directly beneath the Carmelite chapel, within the Grosse STK Lage Zieregg in Southern Styria. It spans 1.48 hectares with around 7,000 vines that are approximately 18 years old. The soil consists of heavy, water-repellent clay and loam over coral limestone. An elevation of around 470 metres brings cool relief to this otherwise sunny plot.
Grape Variety and Vinification
Sauvignon Blanc, spontaneously fermented and aged for thirty months on the fine lees in neutral small oak casks, bottled without filtration. The 2021 vintage began with a cool, wet spring and late flowering; July and August almost made up for the delay in the vineyard. 14.0% vol., dry.
On the Palate
The wine builds up slowly before revealing immense presence. Fruit, minerality, spice, and freshness interact on equal terms without ever feeling heavy. The yeasty note provides calm, while a delicate piquancy lends striking contours and keeps the drinking flow lively. The finish is racy, filigree, and of enormous length.
Special Features
The 1500 ml magnum format slows down bottle maturation. The conversion to biodynamic farming at Weingut Tement began in 2017.
