About this wine
Character
A tightly structured Chardonnay that derives its power from drive and precision. The nose is currently still reserved, revealing herbal-spicy notes of borage, oregano and ground elder, underpinned by yellow fruit nuances of apple peel and small, taut pear. Accompanied by wet blackboard chalk and preserved lemon.
Terroir and Origin
The Steilriegel parcel is located in the south-western part of the Ried Zieregg near Ehrenhausen. The vines, averaging 40 years of age, grow on loose brown earth over a 16-million-year-old coral limestone ridge, with a slope of well over 50 percent, a south-western exposure and an altitude of 400 to 480 metres.
Grape Variety and Vinification
Steilriegel is planted with more than 90 percent Morillon, the Styrian name for Chardonnay. According to the new STK regulations, only one grape variety per single vineyard may be designated as a Grosse STK Lage; Armin Tement has therefore restructured the Ried Zieregg accordingly. The wine was spontaneously fermented and matured for 24 months on the fine lees in small oak casks, before being bottled unfined and unfiltered.
On the Palate
Linear and disciplined, without a single gram of fat: crystalline structure, elegantly woven acidity, rich yet sinewy extract, complemented by finely contoured phenolics along the edges of the tongue. If enjoyed young, it definitely benefits from decanting.
Food Pairings
Young spring Savoy cabbage and baby turnips in lemon butter with capers, skate wing with the very same vegetables, or oven-roasted Portuguese kid goat.
Key Facts
Grosse STK Lage in a 1500 ml magnum, 13.0% ABV, dry. In this large format, maturation proceeds more slowly, which suits this wine perfectly: it will only reach its full potential after several years of bottle ageing.
