About this wine
Character
A white wine of athletic stature. The extract-rich fruit is crowned by herbal-spicy aromas of borage, oregano, and ground elder, reminiscent of both fresh and dried culinary herbs. Beneath lie yellow tones of apple peel and small pears, complemented by wet blackboard chalk and preserved lemons. The wine remains reserved for now; its full potential will only unfold with a few years of bottle age.
Terroir and Origin
The Steilriegel forms the south-western parcel of Ried Zieregg, the heart of Weingut Tement in Ehrenhausen. The vines, averaging 40 years of age, grow on loose brown earth over a 16-million-year-old coral limestone ridge, on a steep slope exceeding 50 percent gradient with a south-western exposure at 400 to 480 metres of altitude.
Grape Variety and Vinification
Morillon is the Southern Styrian term for Chardonnay; the Steilriegel is planted with more than 90 percent of it. Because the new STK regulations allow only one single grape variety per Grosse STK Lage, Armin Tement restructured Ried Zieregg. The wine fermented spontaneously, matured for 24 months on the fine lees in small oak casks, and was bottled unfined and unfiltered. 13.0% vol., dry.
On the Palate
Straightforward and disciplined, without a single gram of fat: a crystalline transparent structure, elegantly interwoven acidity, rich yet sinewy extract, accompanied by finely contouring phenolics along the edges of the tongue. While already drinking superbly in its youth, decanting opens it up noticeably.
Food Pairings
Young spring Savoy cabbage and baby turnips in lemon butter with capers, the same preparation served with skate wing, as well as Portuguese oven-roasted milk-fed kid goat.
Special Features
Single-vineyard, single-varietal wine from a Grosse STK Lage. The estate's conversion to biodynamic farming began in 2017; in the cellar, spontaneous fermentation and extended lees ageing define the style.
