About this wine

Character

A Vin Doux Naturel at 17.5% vol. that stays taut and lively despite its sweetness. Dried figs, walnuts and caramel from the long ageing sit alongside the mineral edge lent by the schist soils.

Terroir and origin

Maury lies in the Agly valley, sheltered by imposing limestone massifs. The dark schist soils store the day's warmth, while altitude and the Tramontane wind bring cool nights. In 2008 Marjorie and Stéphane Gallet acquired three and a half hectares here on schist and calcareous schist, naming the plots Terres de Fagayra.

Grape variety and winemaking

A blend of Grenache and Carignan, made as a Vin Doux Naturel. Minimalism rules in the cellar: spontaneous fermentation in used oak barrels, no fining, 30 to 50 ppm sulphur at bottling. Hors d'Âge denotes at least five years of ageing in glass demijohns and/or oak barrels; this oxidative ageing produces the brilliant brick red that the term Tuilé refers to.

On the palate

On the nose, dried plums and peaches, cherries and raspberries, along with candied ginger, candied orange peel, dark chocolate with mint, shortbread, lavender and cool stone. To drink both fresh and mature, sensuously creamy; the sweetness is caught by powerful acidity and mingles with red fruit, dried fruit, ripe citrus notes and warm butter biscuit. The length delights just as much as the lightness.

Food pairings

12-hour oven-roasted lamb with plums and apricots, mirabelle plum tart or autumnal tiramisu with chestnuts.

Special features

The vines average 66 years of age and yield around 20 hectolitres per hectare. Since 2011 the Gallets have farmed biodynamically; the early-picked grapes retain floral and citrus notes.
