About this wine

Character

A Pinot Noir that favors finesse over power: aromatic depth, fine-grained tannin, terroir transparency. Structure without heaviness, complexity without opulence, dry at 13.0% vol. The magnum format gives this structure time, allowing the wine to mature more slowly than the standard bottle.

Terroir and origin

The Domaine Trapet Père & Fils is located in Gevrey-Chambertin and farms 18.5 hectares. Ostrea is the Latin word for oyster, referring to the fossilized oyster shells that Jean-Louis Trapet found in these plots. The subsoil was once seabed, and it lends the wine a salty, chalky signature beneath the fruit.

Grape variety and vinification

Pure varietal Pinot Noir. Jean-Louis Trapet, seventh generation, has worked biodynamically since 1996; his credo is to accompany, never to force: precise soil work, observation rather than intervention, gentle gravity-flow cellar work. For the estate's village wines, the proportion of new oak is 20 to 25 percent, keeping the fruit unadorned.

On the palate

Silky texture, carried by dark cherry, raspberry and blackberry. Alongside these, violet, fine spice and an earthy note. The acidity stays vibrant, the tannin is finely polished, and the finish brings back the chalky, saline pull of the soil.

Food pairings

With coq au vin, wild duck with mushroom jus or boeuf bourguignon. Also with aged Comté and Époisses.

Special features

When Arthur Trapet secretly grafted onto American rootstock in the 1880s, the method was forbidden. It was legalized in 1888. Demeter-certified since 2009. The Guide des meilleurs vins de France awards the estate three stars, its highest rating.
