About this wine
Character
A still white wine from Champagne, lean in build and carried by spice. The nose feels calm and composed while remaining under tension: subtle smokiness and yeasty notes over grilled pineapple, green mango, grapefruit, lime and pear, underscored by hazelnut, walnut and a touch of almond. Bready tones of sourdough crust and fresh baguette join in, along with an apricot tart with a caramelised note.
Terroir and origin
The parcel lies near Coulommes-la-Montagne, exposed to the southeast, on a mix of limestone and clay. Chardonnay from a sélection massale was planted here in 1968; it is these old vines that carry the wine. Cyril Bonnet farms a good ten hectares across some 50 parcels in the Montagne de Reims, around Chamery.
Grape variety and vinification
Pure Chardonnay. Fermentation proceeds naturally in 600-litre oak barrels, after which the wine spends 30 months on the lees. Since 2013 the house has worked organically, with wild yeasts, no filtration and only minimal amounts of sulphur.
On the palate
Lean, textured, carried by fine minerality. Taut and saline, with a subtle structure and, despite its 12.0% vol., an intense mouthfeel. The fruit stays in the background, lightly smoky, while nutty and oriental notes take the lead: clove, cinnamon, cardamom and turmeric, joined by marjoram and lemon thyme. Salt, minerality and spice combine into an almost meditative depth.
Distinctive features
Cyril Bonnet returned to Chamery in 2013 and reworked both vineyard and cellar: spontaneous fermentation, no filtration, minimal sulphur. This Coteaux Champenois is at its drinking peak, elegant and without heaviness.
