About this wine

Character

The Voladeros 2023 is a dry-style Pedro Ximénez from the mountains north of Málaga. From the 17th to the 19th century, these grapes made the city famous as a wine name, historically vinified dry; after phylloxera they nearly disappeared entirely. Victoria Ordóñez picks up this thread: a white wine of crystalline clarity with white blossom and fresh almond.

Terroir and origin

The vines grow in the Montes de Málaga, within the Sierra de Málaga Natural Park, at 800 to 1000 metres above sea level. Despite the proximity to the Mediterranean, the climate here is almost continental, with hot days and cool nights. The slopes are too steep for machinery, so harvesting is done by hand. Along narrow paths, the mule Romero carries the grapes to the collection point. Since 2015, Victoria Ordóñez has been tracking down the remaining old Pedro Ximénez vines in mixed plots and separating them from other varieties.

Grape variety and vinification

Pure varietal Pedro Ximénez, farmed biodynamically, with yields rarely exceeding 1000 kilograms per hectare. Fermentation happens spontaneously, each plot vinified separately in small stainless steel tanks, then matured in small French oak barrels renewed annually. The winery in the city of Málaga covers 600 square metres and operates on the garage winery model.

On the palate

Dry, 13.0% ABV, sharply defined. Almond and white blossom carry through to a mineral finish reminiscent of the vineyards' slate soils.

Food pairing recommendations

Cooked octopus, grilled seafish, Jamón Ibérico and mature goat's cheese.

Distinctive features

Victoria Ordóñez founded the bodega in 2015 and, together with her son Guillermo, an agricultural engineer, farms seven hectares of her own; grapes from a further 30 growers supplement the estate to 40 hectares under contract. She learned her craft under Alois Kracher in Austria.
