About this wine
Character
A mature vintage Champagne of creamy fullness and cool tension. Crystalline and spicy, never loud: the magnum format gives the 2009 time, lending it freshness and length.
Terroir and origin
The grapes come from Grand Cru parcels at the heart of the Côte des Blancs: Avize, Cramant, Oger and Le Mesnil-sur-Oger. The average vine age exceeds 45 years. The house's cellars are cut into the chalk and hold a constant 10°C, which slows the wine's development.
Grape variety and vinification
Chardonnay and Pinot Noir. Fermentation uses the indigenous yeasts of Champagne Fleur, while ageing takes place largely in oak with bâtonnage, which is the source of the creamy, full body. Erick De Sousa was one of the first in Avize to use oak barrels, not for oaky flavour but for texture and depth. Extra Brut denotes a very low dosage, 12.5% vol.
On the palate
The nose brings together brioche, roasted almond and dried apricot, backed by white blossom, chalk and a spicy, mushroomy note that explains the cuvée's name. On the palate it is creamy and dense, cut through by cool acidity, with quince zest, nuttiness and saline minerality. The finish is long, nutty and chalky.
Food pairing recommendations
Oysters and shellfish in butter, poached sole with Champagne sauce, pike-perch in cream sauce or sautéed mushrooms. Also aged Parmesan and Comté, as well as sushi with soy sauce.
Special features
The house has farmed organically since 1995 and biodynamically since 2002; organic certification followed in 2010, and Demeter certification in 2013. The Demeter logo appears on the label. The 1500 ml magnum format allows the vintage to mature more slowly.
