About this wine
Character
A generous white Rhône wine from a vineyard high up on Mont Ventoux: lush in aromatics, yet focused on the palate. Warm fruit and Mediterranean spice are constantly enlivened by cooling elements.
Terroir and Origin
The vines grow at Domaine de la Verrière near Crestet, a 9th-century priory that Xavier and Nicole Rolet have been rebuilding since 1993. The vineyards lie at 550 to 630 metres, the highest in the region. Mediterranean warmth by day, coolness by night: this extends the ripening period and keeps the acidity fresh.
Grape Variety and Vinification
Roussanne, Grenache Blanc and Marsanne, rounded off with a touch of Viognier. Harvested by hand, the berries pass over the sorting table twice, and yields remain low. Fermented in small batches; fermentation and ageing take eight months in small oak barrels. 14.5% vol.
On the Palate
Oily and generous, with grapefruit, blood orange, mango and pineapple, along with kaffir lime leaves, ripe apricot, walnut and almond. The spice ranges from turmeric and ras el hanout to cinnamon and cardamom, backed by rosemary, lavender and garrigue. Fine acid peaks and stony nuances activate the wine, while Mediterranean and oriental spice duel in the finish.
Food Pairings
Oven-roasted lemon chicken with tajine sauce and lukewarm couscous, curry soup with grilled prawn skewer or grilled monkfish with clams and saffron risotto.
Special Features
The cellar is carved 12 metres deep into the rock and spans four levels entirely governed by gravity, with no pumping. Chêne Bleu deliberately forgoes AOC classification and bottles as IGP Méditerranée. The estate has worked biodynamically since its beginnings, and Xavier Rolet keeps his own bees on the property.
