About this wine
Character
A rosé that starts light and then reveals more. Juiciness and freshness lead, with structure, a fine texture and a pleasant depth standing behind them. It has charm, minerality too, and a delicate grip that gives it backbone.
Terroir and origin
The vines grow on Mont Ventoux at around 530 metres above sea level on clay and limestone. Xavier and Nicole Rolet have, since 1993, rebuilt the 600-year-old Domaine de la Verrière monastery here, at 630 metres elevation. Mediterranean warmth by day, cooling at night: the grapes ripen more slowly and retain their acidity. Chêne Bleu deliberately forgoes AOC classification and bottles under IGP instead.
Grape variety and vinification
Around two-thirds Grenache Noir from 60-year-old vines, one-third Mourvèdre from roughly twelve-year-old vines at a similar elevation. Direct pressing, spontaneous fermentation, aged in used barrels. In the cellar, Jean-Louis Gallucci oversees the wines and vinifies each parcel separately. 12.5% by volume, dry.
On the palate
On the nose, redcurrants and grapefruit, followed by white peaches and mirabelle plums, with garrigue herbs, white blossom and a hint of crushed limestone behind them. The entry is juicy and fresh, the wine stays elegant throughout, carried by crisp acidity and a delicate grip.
Distinctive features
The estate's cellar is carved 12 metres into the rock and operates on four levels by gravity flow, without pumps. The grapes are selected twice. Biodynamics has shaped the work at Domaine de la Verrière since its earliest days, and Xavier Rolet also keeps bees there. This bottle is a 1500-millilitre magnum.
