About this wine
Character
A powerful red wine from the southern Rhône that holds richness and tension together. Dry, 14.0 % vol., with a structure that gives the wine years of cellaring potential. The magnum format slows the ageing process even further.
Terroir and origin
The vines grow on Mont Ventoux at 550 to 630 metres, around the Domaine de la Verrière, a 9th-century priory that Xavier and Nicole Rolet have restored from ruin since 1993. The days bring Mediterranean warmth, while the cool nights extend the ripening period and keep the aromatics fresh. The soils are tended by Claude and Lydia Bourguignon.
Grape variety and vinification
Grenache and Syrah, vinified by Jean-Louis Gallucci, who brings experience from the Loire and Italy, supported by Zelma Long and Philippe Cambie. The estate's cellar lies twelve metres deep in the rock and operates across four levels by gravity flow, without pumps and without mechanical stress on the fruit.
On the palate
Full-bodied and layered, with ripe cherry, cassis and Mediterranean herbs. The tannins are silky, the acidity well integrated, the finish long.
Food pairings
With braised lamb, a gigot d'agneau with Provençal herbs or a bœuf bourguignon. Also with grilled beef steak with rosemary, game and aged Comté.
Special features
Chêne Bleu has practised biodynamic farming since its beginnings; Xavier Rolet keeps bees on the estate himself. Each parcel is vinified separately, and the grapes are sorted twice. Bottling takes place at the estate in La Verrière, 84110 Crestet.
