About this wine
Character
A Chardonnay with real volume that still holds its shape: ripe and juicy on entry, carried by ripe acidity, yet taut, mineral and long. Here, fullness and precision are not mutually exclusive.
Terroir and origin
The grapes come from a partner estate in the Yonne that has farmed organically for a long time and also owns vineyards in Petit Chablis. The wine's home is Château de Béru in eastern Chablis, a Renaissance estate overlooking the vineyards. The de Béru family began reclaiming the plots left fallow since phylloxera from the late 1980s onwards; since 2004 Athénaïs de Béru has run the estate and converted it to organic, later biodynamic, farming.
Grape variety and vinification
Pure Chardonnay, overseen by winemaker Gaëlle Ribé. In the cellar at Château de Béru, minimal intervention is the rule: careful selection, gentle pressing, spontaneous fermentation with natural yeasts, followed in classic fashion by ageing in small oak barrels. This approach echoes in the nose through notes of yeast and beeswax.
On the palate
The nose is ripe and juicy, with plenty of yellow fruit, orange segments, pineapple and apple skin. On the palate, the ripe yellow fruit returns, accompanied by yellow spice notes. The texture is supple and slightly creamy, the acidity ripe, the finish long and mineral.
Special features
The label carries the Demeter logo. Horses work the estate's own vineyards instead of heavy machinery, with extensive cover crops growing between the rows. 13.0% vol., dry.
