About this wine
Character
The Aurora Bianco Caselle is a white wine from Etna that stays calm on the nose and picks up pace on the palate. Salvo Foti vinifies it so that the place itself speaks: manual work in the vineyard, natural preparations, spontaneous fermentation. What remains is tension, salinity and drinkability at 11.5 % vol.
Terroir and origin
The grapes grow in the Contrada Caselle in the municipality of Milo, on the eastern flank of Mount Etna at 750 metres. The vineyard was planted in 2010 and 2015 in alberello training, with 7,800 vines per hectare, supported by chestnut stakes rather than wire and iron. The wine is declared as Etna Bianco Superiore.
Grape variety and vinification
90 % Carricante, 10 % Minnella bianca. Harvest takes place in the second half of October; the grapes are pressed directly, and the must is left to settle for around 30 hours. Fermentation starts spontaneously with a pied de cuve in stainless steel. Racking and bottling are done by gravity, following the phases of the moon.
On the palate
Straw yellow, bright and clear in the glass. On the nose, citrus zest, lime and orange blossom, alongside chamomile, herbs and the calm of long-steeped tea, plus a saline note of wet stone. The texture is creamy, with a fine melt, yet a very lively acidity keeps it in motion. The austere phenolics pull the wine into a straight line and carry it far into the finish.
Distinctive features
Aurora is the name of a small butterfly found on Etna, threatened with extinction, which appears on the label. In its honour, the vineyard is worked exclusively by hand and with natural preparations. Annual production is around 10,000 bottles.
