About this wine

Character

A white wine that greets you with full aromatics yet never feels heavy. Honeycomb and sweet fruit lead the nose, but the underlying freshness keeps everything in motion. Anyone who finds opulent white wines tiring will find the counter-argument here.

Terroir and origin

The vines grow on the slopes of Mount Etna, on black, mineral-rich soils of cooled lava, volcanic ash and sand. They are trained in alberello etneo, the bush-vine system declared a UNESCO World Heritage practice: no iron posts, no concrete pillars, no wires — only chestnut stakes from the mountain. Each vine is worked individually by hand.

Grape variety and vinification

Single-varietal Carricante, Etna's native white grape, which develops freshness and saline minerality at high altitudes. The grapes are gently processed in the historic palmento, with spontaneous fermentation using wild yeasts. Ageing takes place in neutral vessels, used wooden barrels and cement tanks. Salvo Foti rejects any chemical intervention. 12.5% Vol., dry.

On the palate

Richness and density meet invigorating freshness and delicate vanilla notes. The juicy fruit feels almost more present here than on the nose, spreading broadly across the tongue. Melon, pear purée, quince compote and dried mango intertwine with cedarwood, aniseed, herbs and white nougat. The finish is powerful, carrying a provocative spice.

Food pairings

With crispy celeriac fritters with roasted mushrooms and argan oil, with grilled sea bream with herbs, olive oil and rosemary potatoes or with porcini risotto with honey-glazed quail.

Special features

Salvo Foti works with old, often ungrafted vines whose yields remain small. The palmento, the traditional wine press, gives this wine both its name and its method of production.
