About this wine
Character
A purist Blanc de Noirs that favours structure over fruit. The nose is multi-layered: dried meadow flowers, hay, thyme, marjoram and tarragon, together with roasted hazelnut, almond skin, bread crust and sourdough. The fruit shows redcurrant, raspberry, wild strawberry, candied pear and mirabelle plum, underpinned by cool hints of stone and a delicate trace of smoke.
Terroir and origin
The vineyards lie in Celles-sur-Ource and Chervey in the Côte des Bar: four hectares of Pinot Noir on warm marl soils. They belong to Françoise Martinot, who initiated the conversion to organic farming in 2010.
Grape variety and vinification
Pure Pinot Noir, pressed white in the Blanc de Noirs style. Spontaneous fermentation with wild yeasts, aged in wooden barrels, no added sulphur. Extra Brut denotes a very low dosage; 12.0% vol.
On the palate
The entry is dominated by a taut, almost whip-like acidity that pushes the fruit into the background. What remains is a wine-driven, linear profile with stone dust and chalk, carried by thyme, lavender and marjoram. Hazelnut and almond skin linger on the finish, mingling with a delicate smokiness. The finish cuts off rather abruptly, precise, herbaceous and slightly tart.
Food pairing
Oysters with shallot vinaigrette, sole in butter with almonds, beef tartare with capers and shallots, smoked trout, mushroom risotto with thyme, or Comté aged eighteen months.
Special features
The Bistrøtage cuvées are Charles Dufour's tribute to his mother. He is regarded as one of the most sought-after winemakers in the Côte des Bar and carries her line forward with consistency.
