About this wine
Character
A sparkling wine that demands attention: dry, densely structured, with 12.5% ABV and an aromatic profile of ripe stone fruit, nuts and yeast. Antonio Tornincasa and Flavio Faliva farm biodynamically and make no corrective interventions in the cellar.
Terroir and origin
Cà del Vént lies on the steep hills near Brescia in Lombardy, where wind constantly sweeps across the ridges: the "house of the winds". The eleven parcels span 7.5 hectares at altitudes between 320 and 430 metres, on soils of limestone, clay and heavy marl.
Grape variety and vinification
Pure Chardonnay. Spontaneous fermentation exclusively in used oak barrels, seven months of ageing on fine lees, followed by 46 to 59 months of lees ageing in bottle. No cold stabilisation, no filtration, no fining. During disgorgement, only wine from the same batch is returned to the bottle – here, Pas Operé means without dosage.
On the palate
Radiant gold in the glass, with a fine and persistent perlage. Citrus fruit and white blossom sit alongside ripe stone fruit, with yeast and a chalky, clay-like note behind. Dry, with crisp acidity, a dense mouthfeel and a long, saline, mineral finish.
Special features
In 2015, the DOCG Franciacorta tasting panel refused to approve these wines: deemed too complex, too opulent. Since then, the estate, founded in 1994, has forgone the appellation entirely, bottling 40,000 bottles a year entirely on its own terms. "If you want the terroir to come through in the glass, you have to stay small and not intervene in the cellar," says Antonio Tornincasa.
