About this wine
Character
Taut, yeast-driven and completely dry. The Pensiero SP follows the philosophy that Antonio Tornincasa and Flavio Faliva pursue in their cellar: as little intervention as possible. Sugar plays no role; the depth of this Metodo Classico comes from the soil, the vintage and long ageing on the lees.
Terroir and origin
Cà del Vént's eleven parcels lie on the steep hills near Brescia in Lombardy, at 320 to 430 metres above sea level, covering just 7.5 hectares in total. Winds sweep constantly across the ridges, giving the estate its name, «house of the winds». The soils consist of limestone, clay and heavy loam.
Grape variety and vinification
Single-varietal Chardonnay, grown biodynamically. Fermentation happens spontaneously and exclusively in used oak barrels, followed by seven months on the fine lees. No cold stabilisation, no filtration, no fining. The estate's sparkling wines age for 46 to 59 months on the lees; at disgorgement, only wine from the same batch is returned to the bottle, meaning no dosage. 12.5% vol.
On the palate
A compact, chalky-feeling flow carried by gripping acidity. Ripe yellow apple and lemon zest remain clearly defined, while the long lees ageing lays down brioche and spice beneath. The finish is saline and bone-dry.
Food pairings
With oysters and seared scallops, with turbot in lemon butter or mackerel sashimi. Well-aged Parmigiano Reggiano also finds a counterpart in this freshness.
Special features
Founded in 1994 as a garage winery, Cà del Vént today produces around 40,000 bottles a year. In 2015 the estate gave up the Franciacorta appellation for good and has bottled without it ever since.
