About this wine
Character
A sparkling wine that doesn't win you over with fruit, but with savouriness. Bottled without dosage and therefore uncompromisingly dry, it draws its depth from the long lees ageing: distinct yeasty aromas, porcini and soy sauce combine into pure umami.
Terroir and origin
The grapes grow in the somewhat higher, cooler vineyards of the estate in Oestrich-Winkel in the Rheingau. Jacobus Kühn founded the estate in 1786; today Peter Bernhard and Viktoria run the 21 hectares in the twelfth generation, with Demeter certification since 2009. The same restraint applies in the cellar: spontaneous fermentation, no fining, minimal use of sulphur.
Grape variety and vinification
Pure Pinot Noir, pressed white. In the summer following the harvest, the wine is bottled as sparkling wine and inoculated with yeast, so the second fermentation takes place in the bottle. The sparkling wine then rests for 52 months on the lees. Brut Nature means: no dosage, not a gram of sugar added to balance it.
On the palate
Invigoratingly dry and precise, with juicy fruit and a lively structure. Alongside this, red fruits, ripe apple, cedar wood and nutty hints. Delicate phenolics give the sparkling wine grip and make it a true companion at the table.
Food pairings
Earthy dishes and preparations with roasted notes are the trump card here. As an aperitif, the same phenolics make it wonderfully invigorating.
Special features
Across the estate's 21 hectares, almost exclusively Riesling is grown, making this Pinot Noir the exception. The Demeter logo appears on the label.
