About this wine

Character

A pale, slender white wine that speaks of citrus zest and chalk rather than richness. 12.0% vol., no buttery toast, no vanilla — instead a cool core and a saline pull that carries through to the finish.

Terroir and origin

Domaine Thomas-Collardot farms 2.5 hectares in the heart of Puligny-Montrachet. The core of the vines came from Jacqueline Collardot's grandfathers Henri Chavy and Maurice Thomas; her father Pierre Thomas farmed them until 1992, after which they were leased to cousins. In 2010 Jacqueline Collardot took the vineyards back, the first estate-bottled vintage was released in 2015, and Matthieu Collardot joined in 2018.

Grape variety and vinification

Pure Aligoté. Gentle pressing, 24 hours of settling, then ten months on fine lees in used 228-litre barrels with two to four prior fills. No fining is carried out, only light filtration, and the estate largely does without added sulphur.

On the palate

The attack is pale and narrow, the fruit stays cool: lemon zest and green apple. Lees ageing lends a fine grain, and the finish remains chalky, saline and dry.

Food pairings

With oysters, seafood and sashimi. Jambon persillé and creamy goat cheese also stand up well to this acidity.

Special features

The estate's annual production is around 10,000 bottles. You can taste that this Aligoté receives the same cellar work as the parcels of Les Enseignères, Les Nosroyes and Hameau de Blagny.
