About this wine
Character
A lean, bone-dry Aligoté with vibrant acidity and 12.5% Vol. This wine isn't after breadth but line: clean fruit, little padding, a dry finish.
Terroir and origin
Domaine Thomas-Collardot sits at the heart of Puligny-Montrachet and farms 2.5 hectares. The vines trace back to Jacqueline Collardot's grandfathers, Henri Chavy and Maurice Thomas; her father Pierre Thomas farmed them until 1992, after which they were leased out to cousins. In 2010 Jacqueline Collardot took the vineyards back, trained at the CFPPA in Beaune, and bottled her first vintage in 2015. Her son Matthieu joined in 2018. Annual production runs to around 10,000 bottles.
Grape variety and vinification
Pure Aligoté. In the cellar the family works with gentle pressing and 24 hours of settling, and ageing takes place in used 228-litre barrels that have already seen two to four fills. The Bourgogne wines mature for ten months on fine lees. No fining is done, filtration is only light, and the estate largely forgoes added sulphur.
On the palate
Lemon and lime, alongside green apple, white blossom and an herbal note. The acidity carries the wine, and the finish stays dry, saline and clean.
Food pairings
With oysters, mussels and seafood, with goat's cheese, with trout or sole, and with quiche Lorraine.
Special features
Previously the grapes went to négociants; since 2015 the family has vinified them itself. Aligoté is the traditional grape of kir.
